Work Package 1

Plant Protection Products to improve sustainable wine production

WP Leader: UAB

The aim of this WP, composed by 4 tasks, is: 1) To gather relevant terroir information (climate, soil, terrain and tradition) for different harvests in targeted DOPs / DOCs that may have relevant influence on produced wine and WP2-3 observed outputs; 2) to determine most suitable and feasible procedures for sustainable PPPs application to targeted terroir within evaluated DOPs / DOCs; 3) to evaluate yield and effectiveness of PPPs individually or combined on typical plant abiotic and biotic stressors; 4) to analyze the response of the vine to PPPs application. O1.5. To benchmark PPPs against traditional production in targeted DOPs / DOCs, considering analytical parameters of wines and their organoleptic properties (micro-vinifications).

Work Package 2

Traceability throughout the wine value chain

WP Leader: AIA

Work Package 2 is composed by 4 tasks and is aimed to achieve the following objectives: 1) To implement robust and representative sampling methodologies based on the interactions with WP1; 2) To implement state of the art treatment methodologies to shorten actual existing sample treatment methodologies; 3) To use a combination of cutting-edge technologies (IRMS, Q ICP/MS, GC and HPLC ICP/MS, HR ICP/MS, MC ICP/MS, HR MC ICP/MS, A4F, NanoSIMS) to determine relative abundance of stable isotope ratios of target elements in soil, grape and wine samples to generate fingerprints and trace wines to their geographic origin through benchmarking against EU-Wine DB. O2.4; 4) To integrate gathered information through a multidisciplinary approach to tackle wine terroir authentication in all its dimensions.

Work Package 3

Sensory, compositional analysis and health qualities evaluation

WP Leader: UNIPI

The 4 objectives of WP3 are: 1) To define a methodology to extract nutraceutical compounds for each evaluated DOP/DOC and evaluate potential variations as a result of PPPs application; 2) To define appropriate procedures and methodology for sensory analysis; 3) To correlate WP1&2 outputs, chemical and nutraceutical properties of produced wines with outputs of sensory analysis, to get wine identikits able to follow and protect product until consumer; 4) To obtain a wine scale according to which wines are scored on sensory, chemical and nutritional qualities as well as on typicity and traceability. O3.5 To apply a multifactorial score to select wines Good for thE consumers, Nutraceutical, Ethical and Strongly (GENES) linked to their land of production.

Work Package 4

Implementing blockchain transparency and data provenance

WP Leader: UDG

This WP is addressed to achieve 5 objectives: 1) To identify data/data requirements from different WPs and specify data model for Smart tag and data written in Blockchain; 2) To specify platform architecture/processes to extract functional requirements for invoking and employing smart contracts; 3) To specify encoding and design TRACEWINDU smart tag able to collect, sense and interact with different actors and to certify quality of wine (product passport); 4) To develop decentralized, privacy-preserving and verifiable framework and enablers based on blockchain and smart tags that will meet all functional and non-functional requirements; 5) To use Blockchain technology to promote virtual zero-mile products to enhance relationship between producers and consumers.

Work Package 5

Dissemination, communication, exploitation and networking

WP Leader: INNOLABS

The aim of this WP, composed by six tasks, is: 1) To Develop and deliver a robust CDP for a maximum impact within/external to consortium; 2) To valorize TRACEWINDU outcomes by disseminating results through sound communication/promotional activities to engage maximum number of stakeholders; 3) To ensure effective external communication, dissemination and optimal knowledge transfer of results and applications leading to outreach industrial stakeholders and civil society, who would benefit from project’s outcomes and optimal exploitation of its research outputs; 4) To attract interest of public/investors/research sector/SMEs and SMEs’ associations through publication of articles and advertisements in dedicated technical press, organizing specific events.

Work Package 6

Project management

WP Leader: UAB

This WP will cover the management of the project. It will create a management framework, maintain overall consortium communication, act as communication channel for all dialogue with Research Executive Agency. It will ensure achievement of project aims within time and budget and communication and coordination among partners. The coordinator will set up and manage financial accounting records and reporting mechanisms, providing quality assurance implementation to ensure project performance, impact and visibility.
